Seattle, Washington (September 29, 2026) – Hyatt Regency Lake Washington at Seattle’s Southport, an upscale resort-style hotel on the scenic shores of Lake Washington, invites guests to enjoy Oyster Fest at Water’s Table. Inspired by the festive spirit of Oktoberfest, Oyster Fest puts a Pacific Northwest spin on the traditional fall celebration, with oyster specials ranging from breakfast favorites to classic preparations and hearty entrees.
“Oktoberfest may be known for beer and bratwurst, but we’re giving the tradition a Pacific Northwest twist with Oyster Fest at Water’s Table,” said Brandon Near, Senior Chef de Cuisine at Hyatt Regency Lake Washington. “From breakfast through dinner, the menu highlights the many ways oysters can be enjoyed, whether guests prefer them fried, grilled, baked or fresh-shucked.”
Throughout the month, guests can enjoy a variety of delicious oyster dishes for breakfast, lunch and dinner. Breakfast options include the Hangtown Omelet with fried oysters, bacon, scallions and breakfast potatoes; Oysters Benedict with fried oysters, hollandaise sauce and breakfast potatoes; and Oyster Rockefeller Hash with eggs, spinach, fennel and Parmesan breadcrumbs.
Lunch highlights include an Oyster Po Boy with remoulade, Oyster Fritters with lemon and remoulade, and Oyster Risotto with mushrooms, bacon and herbs.
Dinner offerings include fresh-shucked oysters on the half shell with mignonette and lemon, Oysters Rockefeller, Grilled Oysters with garlic and butter, Oyster Shooters with cocktail sauce and celery, and Broiled Oysters with chipotle bourbon brown butter.
In addition to the special Oyster Fest menu, Water’s Table offers a diverse menu in a relaxed setting overlooking Lake Washington. The restaurant’s floor-to-ceiling windows offer sweeping views of the lake, creating an inviting atmosphere that makes every meal feel like a lakeside escape. The menu features signature dishes such as the Butcher’s Block, featuring three premium cuts of steak served with roasted bone marrow, house-made compound butters, and two sides, alongside selections such as King Salmon, shrimp linguine, vegan risotto and bouillabaisse with prawns, clams, and rockfish. The restaurant will be debuting its fall menu showcasing fresh in-season ingredients at the end of September.
