Kookoolan Farms Vin de Noix (Green Walnut Wine)

In the culinary world, there are two ways in which flavors can combine. In the first way, each added ingredient can be detected on the palate equally, say with rosemary and garlic or ham and pineapple. In the second way, the flavors of each ingredient combine together to make a whole new flavor all together in which each ingredient isn’t nearly as district, say with Caesar dressing or buffalo sauce.

In the case of Yamhill, Oregon’s Kookoolan Farms Vin de Noix, this green walnut dessert wine liqueur easily slides into the latter category. While there are subtle elements of its components—the warmth of the brandy, the bitterness of the red wine and some of the stone fruit notes of the green walnut fruits—the Vin de Noix is a beast all of its own. It’s slightly sweet with a light syrup mouthfeel, has some citrus fruit notes in addition to the stone fruits, and has a comforting spiced finish of anise, vanilla and cinnamon that’s also a lightly tart. This complex and unique after-dinner liqueur should appeal to fans of both dessert wine and brandy who are looking for a whole new experience.
