
Copperworks Tavern & Ember BBQ Restaurant Opening Summer 2026
SEATTLE, WA – Copperworks Distilling Co. is doubling its Copperworks Kenmore footprint with the addition of Copperworks Tavern and Whiskey Garden and Ember BBQ Restaurant, transforming the space next door into a globally-inspired destination for craft cocktails and barbecue.
“After 13 great years, 192 Brewing owner and brewmaster Derek Wyckoff transitioned his focus to brewing for wholesale and recently closed the 192 Lake Trail Taproom,” said Jason Parker, Copperworks President and Co-Founder. “While we’re sad to see a beloved neighbor close this chapter, we saw a special opportunity to grow Copperworks Kenmore in a way that honors the location and builds on the community that already exists here.”
After inviting their food partners at De La Soil Restaurant to get involved, the concept evolved into something even bigger– a space celebrating ingredients and flavors from around the world through Copperworks cocktails and a new BBQ restaurant from chefs Cody and Andrea Westerfield of De La Soil. At Ember, their farm-to-table ethos will shine as world flavors meet barbecue in a menu designed to pair naturally with Copperworks spirits and a cocktail list that follows the same global approach.
EARLY SUMMER 2026 OPENING
“We officially signed the lease to the new space on April 1, exactly fourteen years after signing the lease for our distillery in downtown Seattle,” said Parker. “While a specific opening date has not yet been set, we are targeting a hopeful early Summer 2026 opening for the new concepts.”

With this expansion, Copperworks Kenmore will now include four distinct concepts:
The current Copperworks Kenmore Cocktail Bar and Tasting Room | renamed “Copperworks Barrel House”
De La Soil’s kitchen | continuing inside Copperworks Barrel House
Copperworks Tavern and Whiskey Garden | new concept in the space next door
Ember BBQ inside Copperworks Tavern | new concept in the space next door

As it has been since day one, Copperworks Kenmore will remain counter-service and family-friendly. The expanded Copperworks Kenmore will continue to foster community through markets, chef collaborations, live music, hands-on workshops, and other events.
