Phillips Fermentorium Distilling Co. Stump Gin

From the same team of beverage creatives behind Phillips Brewing Company and Phillips Soda Works, Phillips Fermentorium Distilling Co. in Victoria, BC is designed to be a distillery “where unrestrained creativity and a hand-crafted approach shape unique recipes of all kinds.”

One of those unique recipes is for Stump Coastal Forest Gin. Designed to reflect the distinctive character and flavors of the British Columbia coastline, the spirit is distilled with a BC-grown botanical bill of plants and herbs including bay laurel, grand fir, lavender, coriander, local juniper and Cascade hops. It’s bottled at 90 proof, making it a great cocktail gin (go for a Negroni), but on its own the spirit shines too, exhibiting floral aromatics, an evergreen forest of flavors, and a crisp, lightly hoppy finish.
