The new eatery located in Hyatt at Olive 8 will feature a raw bar and PNW-inspired fare

SEATTLE, Wash. (August 24, 2021) – Hyatt at Olive 8, a boutique hotel in the heart of Seattle, announced today the opening of its new on-site seafood restaurant, TIDAL+, which brings a vibrant dining experience to the downtown area. Inspired by the bounty of the Pacific Northwest, the refined menu offers fresh, seasonal seafood-centric fare with bold flavors that showcases the richness of the area’s fresh catch.

The menu is designed to be a perfect option for any occasion, catering to a large group or the solo diner. Signature offerings include the Lobster Mac & Cheese, Seafood dip and locally sourced tidal-flat oysters. A dedicated raw bar offers fresh fish and shellfish sourced from the Puget Sound and Pacific Ocean’s waters, through relationships with nearby purveyors, such as Key City Fish. Unique to TIDAL+ is the plethora of mouthwatering and bold dipping sauces to accompany the fresh seafood, including black garlic aioli, housemade tartar sauce and mignonettes.

TIDAL+ continues its celebration of the Pacific Northwest region through its hand-crafted cocktails and extensive selection of Washington wines and craft beer options. The cocktails incorporate a rotating selection of housemade infusion syrups, offering something new to try with every visit. Guests are invited to enjoy the signature SeaGarita, which features a salted seafoam for a savory flavor in every sip, or the refreshing housemade limoncello to satisfy any sweet tooth. 

Hotel guests and locals alike are invited to take in the city’s sights through the restaurant’s floor-to-ceiling windows, enjoy a Seattle summer day on the seasonal outdoor patio or sip on their cocktail at the bar. Large-party seating is available, offering spaces for groups up to 35 people, with large-group menus available.

TIDAL+ is on the ground floor of Hyatt at Olive 8, which is part of A Seattle Collection, a group of three downtown properties that also include Hyatt Regency Seattle and Grand Hyatt Seattle, located within a block of each other. A Seattle Collection encourages guests to experience the on-site amenities at all three hotels, regardless of which property the guest has chosen to stay.
