After establishing a booth following at the Capitol Hill neighborhood’s Broadway Farmers Market, Seattle’s Mystic Kombucha is reportedly weeks away from opening a brick-and-mortar shop within its devoted city district. The kombucha brewery was originally a hobby that was born from a homebrewing kit for owners Carlos da Silva and Caitlin Matteson, both yoga instructors-turned-entrepreneurs. The two upped their production and have since entered the market place in on-premise accounts across the city, going about it in all the right ways—brewing 100 percent raw, alive and living kombucha, using organic ingredients when possible and never with artificial flavoring or additives. With the base of organic green, oolong and black teas, Mystic sells a number of flavors, like the Pineapple Pear Elderberry Blossom—a taste that lives up to its name.
