SEATTLE – Hotel Max, Downtown Seattle’s music-centric hotel known for its creative spirit and connection to the city’s grunge scene, has announced the opening of its new neighboring restaurant, Cut Club, from celebrated chef and James Beard Award nominee Ethan Stowell. Located adjacent to the hotel’s ground-floor lobby, Cut Club will operate independently while offering Hotel Max guests and the Seattle community a new destination for modern steakhouse fare, cocktails and an energetic dining experience in the heart of downtown.

The Steaks
Grilled steaks are the centerpiece of our dinner menu. We source premium cuts from Double R Reserve and Snake River Farms, including filet, NY strip, hanger, ribeye, and porterhouse — finished with house compound butters, classic sauces, and your choice of add-ons like lobster tail, jumbo prawns, or seared scallops.
Beyond the Steaks
Dinner goes well beyond beef. King salmon, seared scallops, a double cut pork chop, and a wagyu burger round out a menu with something for everyone — including a thoughtful vegetarian option.
