BroVo Spirits Batch No. 1 Amaro 04

“There’s a special relationship between a lady and her bartender”—or so says the label of the lady-made liquor BroVo Spirits Batch No. 1 Amaro 04, a Northwest spin on the bitter Italian digestif. Number four is one of seven, all handcrafted by the BroVo ladies, Mhairi Voelsgen and Erin Brophy, and a bartender of their choosing. To produce Amaro 04, the proprietors pulled in the Snoqualmie Casino’s Food and Beverage Operations Manager (and barkeep extraordinaire), Patrick Haight, to put his personal touch on their rhubarb-based amaro. Haight’s version has the classic bittersweet orange quality of the spirit with a strong aroma and flavor of hibiscus, backed by eucalyptus and citrus, finishing with a kick of cayenne.
