In a collaboration with Seattle Cider Co., the Fairmont Olympic Hotel has released a cider of its own, laced with honey from its rooftop apiary. The Olympic Honey Cider launched earlier this month—with a swanky party in true Fairmont fashion—and is currently being poured at both Shuckers Oyster Bar and the Terrace Lounge in the hotel’s lobby. Made with a proprietary base from the south Seattle cidery, this cider has slightly muted aromatics of apple and cloying honey that fleshes out on the palate with a soft sweetness. Juicy and crisp, the Hard Honey Cider was (maybe not intentionally) bred to be an oyster-friendly cider, mixing the saline with the sweet.
