Dundee Hills Distilling Co. Brandy

Torii Mor Winery, named to evoke an image of a “beautiful gate to the earth,” specializes in handcrafting elegant and refined Pinot Noir that echoes the spirit of its Burgundy ancestry and earthy namesake. The wines can be found in two tasting locations: Woodinville, Washington, and Dundee, Oregon. However, only at the latter Asian-inspired tasting room can guests delve into the winery’s unique brandy, created via distillation of its prized Pinot Noir grapes.

Under the umbrella of Dundee Hills Distilling Co., the craft 40 percent ABV Pinot Noir brandy blends the winery’s top varietal with water sourced from a nook within the basaltic rock of the Dundee Hills. As if that weren’t intriguing enough, the barrel-aged spirit boasts spicy top notes of wood-fired vanilla, going down the hatch smoother than your basic booze a la fermented fruit—the perfect after-dinner drink for warming up fireside this season.
