Third times the charm: loaded with three types of ginger, the chewy morsels that are the Triple Threat Ginger Cookies contain a full spectrum of flavor that is both sweet and spicy and absolutely addictive. Using ground and fresh ginger, as well as New Deal Distillery’s Ginger Liqueur, these cookies are loaded with fragrant ginger flavor. And, because this ginger liqueur is a concentrated blend of sweet and spicy, you don’t need much to add an extra burst of spicy sweet flavor to tip these cookies over the edge.

Makes: Two dozen cookies
Ingredients:
2 cups flour
1 teaspoon baking soda
½ teaspoon kosher salt
1 teaspoon cinnamon
1 teaspoon ground ginger
½ teaspoon cloves
1 stick butter, melted and cooled
½ ounce New Deal Distillery Ginger Liqueur
½ cup brown sugar, packed
½ cup granulated sugar, plus more for coating
1 egg
¼ cup molasses
1 tablespoon fresh ginger
Directions:
In a pan over medium heat, melt together butter and ginger liqueur. Let cool. In a medium bowl, sift together flour, baking soda, salt, cinnamon, ground ginger and cloves. Set aside.
In a stand mixer fitted with a paddle attachment, beat together butter-liqueur mixture with sugars, egg, molasses and fresh ginger on medium-low speed for about one minute, or until well combined.
On low speed, slowly add dry ingredients and beat until all ingredients are well incorporated. Dough will be sticky. Wrap dough in plastic wrap or in an air-tight container and place in refrigerator for two hours or more. After dough has chilled, remove from fridge and preheat oven to 350 degrees.
To form the cookies, take 1 inch size chunks of dough and roll dough into a ball using your hands. Flatten dough gently and coat in reserved granulated sugar. Place formed cookies onto a lightly greased baking sheet at least two inches apart, and repeat until all cookies have been formed.
Bake cookies for about 12-15 minutes, or until tops begin to crack slightly. Let cool and enjoy.
