Caffeination Cascadia: Three Mexican Coffees to Try Right Now

by | Jan 25, 2016

Coffee, like any food item, can be in season or out of season—and as with other foods, it’s best to enjoy your coffee when it’s in season and freshest. Luckily, different countries in the Bean Belt enjoy different growing seasons, so there will always be in-season coffee to enjoy.

Right now, it’s the perfect time of year to enjoy Mexican coffees: given that Mexico’s peak coffee harvesting season kicked off around November, peak shipping season is beginning and fresh beans have started to arrive in the Northwest. Check out these three great options and be on the lookout for more Mexican-sourced beans at your favorite local cafés and roasteries around the region.

Avion Coffee Roasting Co. Mexico Chiapas || This bright Mexican coffee from Coeur d’Alene, Idado’s Avion Coffee Roasting uses washed process organic and fair-traded beans from the Ixil A’achimbal farm in the Mexican state of Chiapas. A medium roast level brings out notes of citrus, leather and smoke. || $15/16oz.

Pallet Coffee Roasters Mexico Jaltenango Organic || Pallet’s organic, washed process beans, also sourced from the Chiapas region, are grown at a higher altitude than Avion’s, which means the beans demonstrate unique characteristics. In this case, it’s a nuttier flavor profile and floral aromatics. | $19/340g (12oz.)

Seven Coffee Roasters Mexico Santa Fe Organic || The Mexican coffee offered by Seattle’s Seven Coffee Roasters is at once sweet and slightly spicy. You can guarantee it’ll be extra fresh if you order a bag, since Seven roasts its beans to order and ships them out the same day. || $14/12oz.
