Bauman’s Cider Company Announces Grand Opening of New Portland Tasting Room & Restaurant, Bauman’s on Oak

The newest venture from the team behind the orchard-to-bottle Bauman’s Cider Company will kick off its opening weekend April 19-21, 2024

Portland, Oregon (April 15, 2024)Bauman’s Cider Company, the award-winning, Gervais, Oregon-based cidery, is excited to announce the grand opening of their highly anticipated Portland tasting room and destination cider restaurant, Bauman’s on Oak. The tasting room and restaurant, situated inside their new Portland-based cidery, (in the former Ecliptic Moon Room spot on SE Oak Street) will celebrate their grand opening Friday, April 19 through Sunday, April 21 during business hours. 

Founded in 2016 by Christine Walter, Bauman’s Cider Co has quickly gained recognition for its commitment to crafting both modern and traditional ciders on their estate cidery. With a legacy rooted in the apple orchards and berry farms of the Bauman family homestead (founded in 1895) in the Willamette Valley, Christine’s vision for Bauman’s Cider Co has elevated the cider industry, earning international acclaim and positioning her as a leader in the field. In the eight years since its founding, Bauman’s has garnered over 155 medals for its ciders on the national and international stage, and won four consecutive titles of mid-sized cidery of the year at two of the most prestigious cider competitions in the US.

The launch of Bauman’s on Oak marks the opening of a world-class cider experience in downtown Portland, and the next chapter in Christine’s entrepreneurial rise. At Bauman’s on Oak, Christine will collaborate with close friend Chef Daniel Green, former founding partner at Portland’s esteemed Cafe Olli, to create an unparalleled culinary and cider menu. The menu takes inspiration from Christine’s childhood growing up on the farm, and builds on Daniel’s depth of experience as a sourdough baker and fermentation expert. Simplicity, flavor, and texture are key. Guests will savor a variety of dishes made with locally-sourced, seasonal ingredients, and crafted by hand with traditional techniques. Sample menu items include house-made herb butter and sourdough bread, meats cured in-house by Daniel and the Bauman’s team, and brown rice with wild mushrooms and fermented mustard greens. Fermented grains and breads play a big part on the menu, with vegetarian and gluten free dishes available too.

In addition to Daniel Green’s leadership as Head Chef, the Bauman’s on Oak culinary team is stacked with Portland talent. Chris Leimena leads the front of house as General Manager, and has worked with some of Portland’s best restaurants including Higgins, Langbaan, and most recently Le Pigeon/Canard. In the kitchen, Yakira Batres supports Daniel Green as Sous Chef, most recently of Hiyu Wine Farm. The menu, crafted to highlight cider pairings, will showcase Bauman’s ciders alongside some of the region’s best farms and artisanal producers. This includes produce sourced from Bauman Farms, where the orchards that provide fruit for much of Bauman’s Cider are located, as well as Bauman’s Cider’s production space for their harvest-driven, seasonal small batch cider program. 

“Our restaurant and tasting room,” shares Christine Walter, “is a love letter to the cider community. But the thing about the cider community is, everyone is welcome. So whether you’re cider-obsessed, cider-curious, or simply looking for a good meal with friends and family, we’d love to have you in to dine with us.” The format of Bauman’s on Oak hospitality experience allows for range: guests can dive into guided cider flights, culinary and cider pairings, or simply enjoy a glass of one of Oregon’s most-awarded ciders at the bar. In addition to the robust menu, Bauman’s on Oak will feature over 30 taps (including guest ciders, beer, and wines from other local makers), table service, and downtown patio views perfect for spring sunshine. Both cider flights and pours are available, and guests are encouraged to ask the staff for pairing recommendations. 

Together, the team is cultivating a special communion between food and cider, where emphasis is placed on intentionality, careful sourcing, and a time-tested methodology that upends expectations about cider. Bauman’s guarantees that this will not be your typical PNW taproom, but an international cider destination that celebrates cider as an expression of season, place, and time. 

The public is invited to join the Grand Opening fun this Friday, April 19th through Sunday, April 22nd. The Bauman’s team will be holding raffles for special prizes all weekend, along with tours, pie specials, and more surprises.
