Baird & Dewar 2012 Farmhouse Cider

Baird & Dewar Farmhouse Cider was once an unadorned homebrew operation, expanding in the last few years outside of Zeb Dewar’s house with the help of his colleague Trevor Baird. Dewar’s background boats nearly a decade’s worth of experience as a cellar hand, assistant winemaker and harvest manager within the Willamette Valley while Baird is a proud, second generation farmer and fruit grower. The partnership has garnered one of the more unique cider styles coming out of Oregon and the Columbia Gorge—farmhouse cider. Often a style slated for beer, farmhouse ciders tackle a similar take with robust and earthy aromas and flavors thanks to wild fermentation and time for bottle conditioning—six weeks to be exact. The 2012 Farmhouse cider from Baird & Dewar is true to form with lees-y, yeasty aromas backed by clear apple and earth, while the palate sparkles with effervescence, elevating the weight of this medium-body, age-worthy cider.
