As a huge fan of Northwest distilleries, I was thrilled to finally visit Sheringham Distillery on Vancouver Island. Their spirits truly capture the West Coast’s wild beauty, and I was eager to see where the magic happens. Co-founder Alayne MacIsaac was kind enough to show me around their cozy Langford, British Columbia, tasting room, and her passion for their craft was infectious.
We chatted about their meticulous process and use of local botanicals, which is so evident in their standout Raincoast Gin. Inspired by the temperate rainforests that surround them, the gin blends traditional juniper and citrus with unique coastal notes of nettle and oakmoss. It’s like a subtle taste of the British Columbia landscape in every sip.

Instant Revival Cocktail
This refreshing cocktail, whipped up by Gareth Jones from Sheringham Distillery, perfectly highlights the bright, coastal vibes of Raincoast Gin. It’s a super balanced drink that’s both invigorating and classy enough to impress your guests at your next dinner party.
Ingredients
3/4 ounce Raincoast Gin
3/4 ounce Sheringham Fresh Lemon Liqueur
3/4 ounce Lillet Blanc
3/4 ounce Fresh lemon juice
Green Chartreuse for rinsing
Directions
Pour a small amount of Green Chartreuse (about ¼ ounce) into a chilled coupe glass. Swirl to coat the inside of the glass, then discard the excess. Combine the Raincoast Gin, Sheringham Fresh Lemon Liqueur, Lillet Blanc and lemon juice in a shaker tin filled with ice. Shake vigorously until well-chilled. Strain the mixture into the prepared coupe glass and garnish with a fresh lemon twist.
