Bourbon Roasted Peaches and Berries

Juicy peaches are in season and we’re using them to whip up this easy fruit-focused dessert, whether you need a treat for a dinner party or after a long day at work. Trail’s End Bourbon from Hood River Distillers pairs perfectly with fresh peaches and blackberries, along with notes of brown sugar and cinnamon. Don’t forget the vanilla ice cream!

Ingredients

2 large peaches, cut into quarters
6 ounces fresh blackberries
⅔ cup brown sugar
2 teaspoons cinnamon
⅓ cup Trail’s End Bourbon

Directions

Preheat the oven to 400 degrees Fahrenheit.

In a large bowl, combine the peaches, blackberries, brown sugar, cinnamon and bourbon. Stir to coat the fruit.

Pour the mixture into a rimmed baking sheet. Roast for 35 to 40 minutes until the peaches are tender. Once cooked, remove the fruit from the oven. Reserve the leftover liquid in the pan in a small bowl and allow the fruit to cool slightly.

Serve with vanilla ice cream and a drizzle of the leftover bourbon sauce.
