Washington’s South Sound is finally getting the credit and notice it deserves, between the seven wineries on the wine trail, 22 breweries and recent four distilleries popping up from Tacoma to Lacey and Centralia—there is now room for cider. Co-founders David White and Heather Ringwood released bottles from Olympia’s Whitewood Cider Company this spring as the first and only cidery between Seattle and Portland. The aptly named South Sounder is a shout-out to the locals, made by the locals—the blend is of 100 percent locally sourced apples from friends of the cidery and farms around the South Puget Sound. The cider produced is fresh with stonefruits like apricot and nectarines, zesty with citrus sparks and booming acidity that lasts through the honeyed, red apple finish.
