Westland Whiskey: Pioneering American Single Malt with Pacific Northwest Roots

Founded in 2010, Seattle’s Westland Distillery brings a new and uniquely American voice to the world of single malt whiskey. Westland explores possibilities that have been ignored for generations and, along the way, it has been recognized as the country’s leading producer of American single malt whiskey.

While Westland uses the same basic ingredients and processes used for centuries by traditional Old World single malt producers, it doesn’t simply seek to replicate the results of its Scottish predecessors. Instead, Westland works to create whiskeys that reflect the distinct qualities of its time, place and culture. Here in the Pacific Northwest, that means embedding a commitment to sustainability that harmonizes with whiskey-making traditions that have been in place for hundreds of years. PACIFIC OLD FASHION 

Ingredients

2 ounces Westland Flagship Single Malt Whiskey
½ ounce Stout Syrup (recipe follows)
1 dash Angostura Bitters

Garnish
Flamed Orange Coin + Optional Fresh Raspberry

Directions

Combine all ingredients in a mixing glass and stir with cubed ice until well chilled. Strain over fresh ice in a rocks glass. Flame orange coin over glass and discard. Garnish with fresh raspberry, if using.

To make Stout Syrup, combine equal amounts stout and sugar and stir together at room temperature until sugar dissolves. Bottle and store in the refrigerator for up to a week.
