SPIRIT FRIDAY: Bull Run Distilling Pacific Rum

Named after the Bull Run watershed, the primary drinking water supply for the City of Portland, Bull Run Distilling was a conversation over cocktails that went right for co-founders Lee Medoff (the tenured distiller) and Patrick Bernards (the sales and marketing mastermind). Focused on whiskeys and vodka, Bull Run is one of the few producers in the Northwest that offers a rum in their line-up. The Pacific Rum is a light rum, made from organic Souther American cane juice and ages for four weeks in used bourbon barrels. The outcome is aromas of vanilla, cinnamon and cardamom spices, suggestive of a Chai tea and complemented with banana bread notes. Breakfast almost? Similar tones pull out on the palate as well, finishing smooth with coconut and other tropical fruit tones.
