Ste. Chapelle Winery in Caldwell, Idaho, was founded on humble aspirations, despite that it was named after King Louis IX’s 13th century Parisian court chapel, La Sainte Chapelle, and is now Idaho’s largest winery in both sales volume and production. Honest. Built by the Symms family (see former U.S. senator Steven Symms) in 1976 with all intentions to be a small operation, the family quickly realized the demand for local wine in their home state and quickly stepped up to produce supply to meet the needs. In 2012, Precept Wine acquired Ste. Chapelle and sought to bring its wines mainstream, showcasing what Idaho is made of. Take the 2012 Snake River Valley Sauvignon Blanc at 1,500 cases, for example. Thanks to volcanic soils and hot summer days/cooler nights, this wine brings ripe tropical fruits to the forefront with mango, white peach and starfruit while citrus and acid balance out the similar tones on the palate. What’s still modest is the price—you can find this bottle for $12 or less.
