
Seattle, WA – April 17, 2025) – Salt & Straw is excited to announce plans for two new scoop shops in the Greater Seattle area. The Portland-based company, founded in 2011 by cousins Kim and Tyler Malek, is known for crafting imaginative, award-winning ice cream. Co-founder and chef, Tyler Malek, creates a menu of classic flavors, alongside monthly rotating menus that reflect culinary trends, seasonality of ingredients and relevant cultural moments.
Before founding Salt & Straw, Co-Founder and CEO Kim Malek lived and worked in Seattle, a city that helped shape her vision for the company. Chief Creative Officer, Co-Founder, and her cousin, Tyler Malek grew up in Washington. Their deep connection to the region shines through in their creative collaborations with local businesses, resulting in some of their most iconic flavors. Partnerships with Washington-based favorites include Rachel’s Ginger Beer, Wunderground Coffee, Fran’s Chocolate, Métier Brewing, Boon Boona Coffee, Ezell’s Famous Chicken, and Beecher’s Cheese and Alaska Airlines. With three Seattle locations already open—and another coming to Queen Anne this summer—Salt & Straw continues to deepen its roots in the Pacific Northwest this upcoming year.
