Mo Heck’s Project V Distillery in Woodinville, Wash. is built on family—from the winter wheat grass she sources from her aunt and uncle for her vodkas to her “children’s tears” which “make it so sweet.” In jest and always with a smile, Heck is part of the small group of Northwest female distillers you could count on one hand. Her Single Silo Vodka is an 80 proof spirit, lightly filtered through carbon and is soft, sweet and approachable. To make her Single Silo Chai-infused Vodka, the base vodka is infused with her house Chai recipe, founded on a 24-hour infusion of spices procured from Market Spice in Seattle. Already sweet, the vodka is now developed into a solo sipper, perfect to pour over ice or for the ultimate White Russian.
