Phillips Fermentorium Distilling Co. Tonics

From the good folks that produce some of our favorite beers in Victoria, Phillips Brewing has opened a distilling arm where “where Old World craftsmanship meets modern techniques” under the moniker of Phillips Fermentorium Distilling Co. In addition to the West Coast-inspired STUMP Gin—as well as a stunning and fun complement—they’ve created four all-natural artisan tonics sweetened with raw cane sugar. I find them addictive to sip solo, with their light sweetness and delicate potency, though when mixed and matched with the layers of flavours in STUMP Gin (or your own preference), the magic of alchemy happens. Choose your spell with Classic Dry (citrus kissed), Cucumber Mint (cool and true to form), Philosopher’s Brew (herbal and perfumed, in collaboration with Silk Road Tea) or Botanical Brew (floral, blossoms).
