JAMES BEARD NOMINATED CHEF OSCAR AMADOR TO OPEN LA LOBA IN SEATTLE

James Beard nominated Chef Oscar Amador and EDO Hospitality Group are excited to introduce La Loba, a vibrant new restaurant at 1 Hotel Seattle in South Lake Union. Blending the rich culinary traditions of Barcelona with the dynamic spirit of Seattle, La Loba will showcase the bounty of the Pacific Northwest through partnerships with local farms, fisheries, and artisans. With a commitment to seasonality, sustainability, and thoughtful craftsmanship, La Loba invites guests to experience the flavors of Seattle through a distinctly Spanish lens. La Loba, which translates to “she-wolf,” embodies independence, resilience, and strength – mirroring the natural beauty and untamed spirit of both cities. 

“Like Seattle, Barcelona is embraced by both the abundant sea and the rugged mountains, so I feel a natural connection to this city’s landscape,” said Oscar Amador. “As a child, I spent time in the mountains near Teruel, where my mother is from, foraging for mushrooms and truffles in the early mornings during the season. My family also produced our own olive oil and, from time to time, our own wine, while living off the bounty of our garden. These experiences shaped my culinary identity just as much as the Mediterranean coastline did. Returning to a place so intertwined with nature, where the land and sea are equally celebrated, feels like coming home in a new way. Seattle’s seafood and produce are among the most beautiful in the world, and I’m honored to showcase them through my cooking. I look forward to immersing myself in this incredible community, building relationships with local farmers and vendors, and sharing my story through the flavors of this region.”

La Loba’s menu is a celebration of the incredible ingredients of the Pacific Northwest, infused with Spanish influences and global techniques. Dishes like the Salmon Candy Smoked Montadito with truffled Beecher’s cheese and the 30-Day Dry-Aged Striploin Carpaccio showcase a balance of bold innovation with warm familiarity. Chef Oscar and his team are partnering with a variety of local purveyors, such as Charlie’s Produce to source fresh, seasonal produce from Eastern Washington’s farming community, including DeGoede Farms; EC Wilson Meat for sustainable proteins; and esteemed local producers, such as Cascadia Creamery, Beecher’s, and Coro Foods. Rooted in sustainability, La Loba’s menu will reimagine traditional Spanish flavors with innovative, sustainable techniques like lactic fermentation, freeze-drying, and whole-ingredient cooking—maximizing flavor while minimizing waste.

La Loba’s wine and beverage programs, crafted by sommelier and EDO Hospitality Group partner, Joseph Mikulich, celebrates storytelling and the art of creating unforgettable dining experiences. A thoughtful extension of Chef Oscar’s approach to cuisine, the wine list bridges the historic regions of Spain with the innovative landscapes of Washington and Oregon, where Spanish grape varietals thrive in the Pacific Northwest’s unique terroir. The curated selection sparks curiosity, excitement, and connection—featuring timeless Spanish classics alongside bold, emerging expressions from the Pacific Northwest. The beverage program takes a global approach, showcasing exceptional brands and high-quality ingredients, with a special focus on Spain’s iconic gin & tonic culture. La Loba will also feature a robust selection of cocktails, non-alcoholic options, and expertly crafted drinks that cater to a variety of tastes, ensuring every guest finds something to enjoy.

ABOUT OSCAR AMADOR:

Raised in Barcelona, Chef Oscar Amador fell in love with Catalonia’s rich culinary traditions at an early age. After graduating from the prestigious Hofmann BCN Chef School, he was invited to stage at El Bulli and El Raco de Can Fabes, both Three Michelin-Star awarded restaurants. After successfully owning and operating Ajo Negro, TapeArt, and A Mano for over a decade, Chef Oscar decided to move to Las Vegas to conquer the American palate.
