Coastal Cuisine Meets Pacific Northwest at Kimpton Hotel Monaco Seattle’s Newest Restaurant, Marin

SEATTLE, WA – June 24, 2025 – A new culinary destination has arrived in downtown Seattle with the grand opening of Marin, the signature restaurant inside the newly renovated Kimpton Hotel Monaco Seattle. Now open, Marin brings together global coastal cuisine, thoughtful design, and warm hospitality in a setting that reflects Seattle’s maritime spirit.

With design consulting by Lily Yung Studio and operational support from Spark3 Hospitality, the interiors blend natural wood, sculptural lighting, and seafaring details into a calm, refined space. The restaurant’s symbolic icon, the Caspian Tern, reflects its brand ethos, representing calm resilience, independence, and the freedom of movement shared by coastal cultures around the world.

Marin offers guests a warm, refined dining destination in the newly reimagined Kimpton property in the heart of downtown Seattle. With seating for over 100 guests, including a lively bar and a welcoming patio launching later this summer. 

Led by Executive Chef Robin Posey, a long-time Seattleite, Marin will feature signature dishes including Grilled British Columbia King Salmon, Moroccan Rotisserie Chicken, Oregon Tuna Tartare Crostino, and shareable starters like Mezze with fresh homemade pita and the signature Smoked Trout Dip. The menu also includes vegetarian options and salads alongside desserts and rotating specials.

“Marin is a modern coastal restaurant that captures the spirit of Seattle’s unique environment where land meets sea,” said Robin Posey, the Executive Chef of Marin. “The menu at Marin is our way of showing love to the Pacific Northwest, but with a global twist. We have pulled inspiration from different coastal regions, so every dish feels like guests are being transported.” 

Happy Hour is offered daily from 2 PM to 5 PM and features curated food and drink specials such as the Painted Hills Beef Burger, Fried Pacific Oysters, and Little Gem Caesar, paired with remixed cocktails like the Marigold Negroni and Olympic Old Fashioned. 

Marin offers an all-day experience as the restaurant serves weekday breakfast from 7 AM to 10 AM, lunch from 11 AM to 2 PM, dinner from 5 PM to 9 PM, happy hour daily from 2 PM to 5 PM and weekend brunch from 7 AM to 2 PM.
