For those of us who have lived around the Lake City neighborhood of Seattle, as I have, the old CM Hopkins building was a forgotten piece of real estate right on busy Lake City Way. But as of just months ago, new life has been breathed back into the building as Hellbent Brewing Company moved on in and, after months of renovations and planning, have transformed the lackluster location into a beer lover’s retreat. The two story brewery features all that any of us would want in a good bar—pool tables, televisions, tons of seating, a few video games, and not to mention, spectacular air conditioning. There are even windows stretching two stories that let onlookers get a full view of the back taproom, where the hop-filled fermented magic happens. Exposed wood, large leather sofas and an industrial-chic chandelier carry the rustic yet luxurious vibe of the brewery, that continues right on to outside. An outdoor patio adorned with couches to lounge on offer seating as a number of rotating food trucks pull right on up, offering fun and filling food to match with your favorite brew.
And of course, there’s the beer. Hellbent offers their own seasonal brews, as well as featured beers from some of their favorite microbreweries. The rich, dark amber color of Hellbent’s Funky Red Patina is a sultry red eye-catcher. Made with Mt. Hood and Centennial hops, the beer has a subtle caramel-like touch of sweetness on top of full malty flavor.
