From Kickstarter beginnings, Portland-based Genki-Su launched a drinking vinegar venture off an old family recipe from Okinawa, Japan. According to Genki-Su, this ancient Japanese drink was created to help samurai warriors fight fatigue and today, drinking vinegars are now consumed by nearly 70 percent of Japan’s population.
Do not confuse these libations with cooking vinegars—although similarly based, Genki-Su’s vinegars are enhanced with fruit and contain half the acidity. Made from 100 percent natural products and based on coconut vinegar with no sugar added, these vinegars have many health benefits ranging from immune system support to aiding in digestion and lowering cholesterol. The Nashi Asian Pear Tart Tonic takes the coconut vinegar base and infuses with Nashi (Asian pear), Bartlett pear, Anjou pear, Fuji apple, honey and stevia for an exotic flavor full of apple, pear and plenty of bite. An added benefit of Nashi—the Asian pear helps to care for eyes with its hefty portion of vitamin C.
