Chef Mike Easton Returns to IL Nido for Abeja’s 25th Anniversary Celebration

Abeja’s Winemakers Join Easton and IL Nido Chef-Owner Katie Gallego for a One-Night Collaboration Dinner on Saturday, August 22nd

Walla Walla’s Abeja Winery will bring its 25th anniversary celebration west of the Cascades on Saturday, August 22, for a special dinner at IL Nido in West Seattle.

The Kitchen at Abeja Executive Chef and IL Nido founder Mike Easton will collaborate with IL Nido Chef and Co-Owner Katie Gallego on a four-course prix fixe menu paired with Abeja wines to celebrate Abeja’s 25 years. Easton, who joined Abeja in June 2024, will co-host the evening with winemakers Dan Wampfler and Amy Alvarez-Wampfler. 

Seatings are available from 4:45 – 8 p.m. The dinner and wine are $225 per person, plus tax and gratuity. Reservations are available from this link.

Easton opened IL Nido in 2019 in the historic Alki Homestead, earning acclaim for a menu centered on Italian tradition, handmade pasta and seasonal ingredients. Gallego joined the restaurant during its opening year and became chef de cuisine before assuming ownership with longtime manager Cameron Williams in 2022. She has continued to guide IL Nido’s culinary direction as its chef and co-owner. 

“For 25 years, Abeja has been shaped by the people who have gathered around our wines and our table,” said Alvarez-Wampfler. “Seattle has long been home to many of Abeja’s friends and supporters. Bringing this anniversary dinner to IL Nido allows us to share the occasion with them in a setting that holds a personal connection.”

Easton opened IL Nido in 2019 in the historic Alki Homestead, earning acclaim for a menu rooted in Italian tradition, handmade pasta and seasonal ingredients. A four-time James Beard Award nominee, he is also chef-owner of Bar Bacetto in Waitsburg. As Executive Chef at The Kitchen at Abeja in Walla Walla, Easton leads menu development, recipe design and culinary training, working closely with Chef de Cuisine Frank Magaña to create Tuscan-inspired prix fixe menus using fresh, local ingredients. The August/September 2026 issue of Wine Enthusiast magazine named The Kitchen at Abeja one of the best winery restaurants in the world.
