Elemental Hard Cider Carbon

As if making wine wasn’t enough for the husband-and-wife team Brian and Christina Callahan, the Woodinville, Washington couple launched Elemental Hard Cider in December. With Callahan Cellars and its wood-fired pizza oven under their belt in the wine tourism-heavy Seattle suburb, the Callahans have released three ciders under Elemental. All of the hard ciders are made with Northwest apples, cold-fermented with minimal filtering and devoted to expressing the atmospheric components, like their Carbon Traditional Dry cider. Lightly effervescent with fruit-forward aromatic of freshly sliced Fuji apples, apple skins, earth,  yeast and brioche, the palate is dry and crisp, fully tannic with Old World charm and grit.
