A New Rooftop Mexican Bar at E. Pike and Summit
SEATTLE, WA – The corner of Summit and East Pine in Seattle’s Capitol Hill neighborhood will no longer stand vacant. Cantina del Sol, a casual rooftop Mexican bar opens May 21, 2025,—just blocks from downtown and the convention centers.
Perched on the building’s rooftop, Cantina del Sol is the first of four distinct food and drink spaces opening within the larger space that once housed Mezcaleria Oaxaca. With a covered rooftop deck (complete with heaters), Cantina del Sol offers a seasonal hangout from May through December (with current plans to be closed January–April).
The bar will be serving up a colorful array of housemade cocktails including the bright pink, Prickly Pear margarita, lime green Lima margarita and the deep red, Wildflower, a hibiscus mezcal cocktail. For those not indulging don’t miss out on the classic Agua Frescas and homemade Horchata.
The bar will also serve food out of a refurbished charming, bright pink 1960’s Boles Aero camp trailer and will serve tacos made from homemade tortillas from the same team behind Agua Verde Café. Carnitas, Suadero beef and harissa glazed cauliflower are some of the classic tacos to try. Burritos, quesadillas and nachos will be served with a choice of three different bright, house made fresh salsas. And don’t forget about the breakfast tacos, breakfast burritos and chilaquiles (great paired with a Michelada of course) served only during the day on the weekends.

The space is steeped in creative energy—from hand-painted signage by Ben Hubard of BenBusy to a stairwell mural preserving the previous business’ signs created by celebrated sign artist Sean Barton. As for the Cantina del Sol sound – coming soon: record-spinning DJ sets, low-lit Latin soul, cumbia, and balearic grooves drifting across the rooftop—think laid-back nights made for sipping, swaying, and staying awhile.
Cantina del Sol is the only Mexican concept in the building, located solely on the rooftop. Next up: a take-out-only window launching in late June 2025 out of the Summit-facing walk-up window with parklet seating on Summit (next to Cantina del Sol’s entrance).
A separate bar concept and restaurant concept will open on the ground floor and are slated to open summer and early fall, each with familiar ties to Seattle’s restaurant history and a bit of a Capitol Hill comeback story.
Large party events are currently on hold at Cantina del Sol, but stay tuned for summer booking opportunities as more as the full project comes to life.
