Brewer Whitney Burnside and Chef Doug Adams Open Grand Fir Brewing in Portland, Oregon

The New Buckman Neighborhood Brewery Opens

Portland, OR (November 17, 2022)  — Grand Fir Brewing, a new brewpub from award-winning brewer Whitney Burnside and celebrated chef Doug Adams, will open in a restored historic building at 1403 SE Stark in Portland’s Buckman neighborhood. The independent brewery and restaurant combines the impressive resumes and passions of the wife-and-husband team. Grand Fir Brewing opens on Friday, November 18 with lunch and dinner service, six days a week.

A brewer with a culinary background who became the city’s first female brewmaster in 2014 at the age of 27, Whitney Burnside brews a range of styles in her new 15-barrel house at Grand Fir Brewing. Opening taps include Old Growth Pale Ale, a classic, evergreen style with notes of candied lemon and pine, Heartwood Stout, an Export stout with notes of espresso and graham cracker, and Tack Shack East Texas Lager, a Czech amber lager that gives a nod to Adams’ Texas roots and is served in its own specialty glassware.

On the food menu, Chef Doug Adams, a Top Chef finalist and notable Portland chef, serves approachable pub fare with thoughtful attention to detail. Shareable dishes and large plates complement Burnside’s brewing, with Adams’ emphasis on smoked vegetables and meats and balanced, pub-inspired dishes. On the opening menu, guests will find a beer-braised elk finished with egg yolk, smoked Calabrian chicken wings with black pepper honey, and a Blue cheese wedge salad with Montreal seasoning. 

For dessert, Grand Fir serves homemade soft serve, with nostalgic candy bar flavors to start, and peak fruit seasonal flavors to follow. 

The cocktail list also complements Grand Fir Brewing’s beer and food. Spearheaded by Eugene Doherty, formerly of The Wythe Hotel and Diner in Brooklyn, the drinks list features That Smoke, with rye whiskey and Lapsang Souchong-infused vermouth, and Rusty’s Irish Whip, with whiskey, lime juice, and celery bitters. Wines from West Coast producers will also be available, including glass pours from Eric Wareheim’s Las Jaras, Evening Land Vineyards, and others.

“Grand Fir is a longtime dream come true for us,” said Burnside. “Doug and I have wanted to partner on a venture together for years and we’re so excited to see that vision realized here.”

Located in a renovated historic building on SE Stark Street and 14th Avenue, the corner brewery is all wood and light, with tall ceilings supported by salvaged Douglas fir beams and floor-to-ceiling windows. The two-level, open brewery space seats 85 guests in all, with a lounge overlooking the brewing floor, bar seating, and table seating on the upper and lower levels.

The brewery also offers a rotating cast of collaborative brews and opens with two collab taps: Baby One More Time, a double IPA collaboration with 10 Barrel Brewing, and My Father’s Pilsner, a West Coast IPA with Living Haüs and Obelisk Brewing. 

Grand Fir Supper Club, a ticketed dinner series, will launch in the winter, with intimate seating in the barrel room. The Supper Club will feature guest chefs on a monthly basis starting in January 2023. 

The brewpub opens for lunch and dinner Tuesday through Sunday from 12 pm to 10 pm, and Friday & Saturday from 12 pm to 11 am.
