A Berry Boozy Summer: No-Bake Berry Cheesecakes

When it’s too hot to turn on the oven during summer, this is the ideal treat. These mini cheesecakes are served in a jar, making them great for backyard barbecues and parties on the deck. Soak a mixture of fresh berries in Wild Roots Huckleberry Vodka to add some punch.

Ingredients

For the cheesecakes

1 cup graham cracker crumbs
2 tablespoons melted butter
8 ounces cream cheese, softened
1 cup powdered sugar
2 tablespoons sour cream

For the cheesecake topping

¼ cup blackberries, cut in half
¼ cup blueberries
½ cup raspberries
⅓ cup Wild Roots Huckleberry Vodka

Directions

In a bowl, combine the berries. Pour the vodka over top and use a fork to gently mash the berries. Place in the fridge to soak for at least two hours.

In a medium bowl, mix together the graham cracker crumbs and melted butter. Divide the mixture between four jars. Use your fingers to push the mixture into the bottom of the jar.

To make the cheesecake filling, use a hand mixer to mix together the cream cheese, powdered sugar and sour cream until smooth and creamy. Divide the mixture between the four jars, then place in the fridge to set for two hours.

Spoon the vodka-soaked berries on top of the no-bake cheesecakes before serving.
