This last April brought a new style of drink to the streets of Spokane, Wash.—cider, in the form of Liberty Ciderworks. Made in a traditional, “Old World” style, Liberty (comprised of owners Rick Hasting and Austin Dickey) is a small operation built on a small number of fermentors, a singular carbonation tank and a bottling line the two built themselves. One of three ciders is the limited-release Jonathan, their “New World” style cider scented with bruised and baked apple aromas, along with cinnamon and other sweet baking spices. The palate is dry, tart with apple and briskly refreshing—a classic, affable rendition of cider from today.
