Kachka Fabrika Rolls Out Late Night Menu and Extends Oyster Happy Hour From 4-6pm

The bar is serving up $1 oysters, $5 mini martinis, $10 caviar bumps, and late night-only dishes during two nightly happy hours 

Portland, Ore. (Nov. 19, 2025) — Fabrika, Kachka’s cocktail and zakuski bar located inside its Northeast Portland vodka distillery, unveiled a new late-night happy hour menu (9pm-close), with $5 drinks and $10 noshes, and has extended its popular evening oyster happy hour another hour, from 4-6pm. Both are offered Thursday through Monday nights. Starting off each evening at the seafood-focused spot are the freshly shucked Pacific Northwest oysters offered for just $1 each. Early happy hour drink specials include $10 Bloody Marys and freezer martinis.

Fabrika’s refined focus makes a departure late night, with a playful menu of drinks and dishes to fuel late night fun from 9pm until closeMini martinis, tiny bottles of Kachka Ice, and fun shots like the Flaming Baba: Earl Grey brandy, Giffard framboise, Hamilton demerara overproof rum, orange, fill out the menu of $5 happy hour drinks – designed to wash down $10 caviar bumps (6g. White Sturgeon). Other late night noshes available only on the later happy hour menu are: fried “Buffalo Chicken” pelmeni, clam strips with shrimp remoulade, McKachka’s Fillet-O-Fish (rye bread battered cod fish, jonjoli tartar, shrettuce, druzhba cheese on a brioche bun).

Since opening Kachka in 2014, we’ve been on a mission to showcase the beauty and breadth of post-Soviet food and drink—especially vodka! Over the years, our house infusions became a signature of the restaurant, sparking curiosity and conversations at the table. But behind the scenes, we dreamed of something bigger: bringing distillation in-house. Fabrika is the realization of that dream. We created the cocktail bar as a place to celebrate it all: martinis made with our vodka, a seafood-forward zakuski menu, and the beauty of gathering together. It’s also located next door to our dumpling workshop, so of course you can find a steaming bowl of pelmeni on the menu there, too. Settle in, raise a toast, and as always, follow the Kachka ritual:
