Perched on the largest marina on the West Coast, Everett, Wash.’s Bluewater Distilling sits surrounded by sailboats, seafarers and Scuttlebutt Brewing. After more than five years of refining their recipe, Bluewater released their Halcyon Organic Distilled Gin last March. The team felt the gin was a testament to their mission as a distillery—high quality, organic and pure. The gin is in classic London Dry style, a blend of juniper, orange, lemon, coriander, Angelica root, Orris root, licorice root and cassia bark is steeped in a kettle for a full 24 hours to extract the desired aromas and produce an extremely dry-fashioned gin. All of the spice comes through in the bouquet of the spirit while the palate is clean, crisp and, as aspired to be, dry.
