Introducing the Daily Sip, our day-to-day suggestions for how to spend your waking hours in the world of libations, from juice and tea to wine, beer and more.

CIDER TUESDAYS: Sea Cider Kings & Spies Medium Dry Cider

Cider-master and Sea Cider proprietor Kristen Jordan only presses organic heritage apples from her own farm or from neighboring estates in Victoria, B.C., using the traditional rack and cloth method and fermenting with champagne yeast to plug it with a surge of sparkling texture. This particular cider is a blend of the heritage apple varieties Kings and Northern Spies, producing a nose loaded with red and golden apple aromas and plumped up by tropical tones of pineapple and orange citrus. The palate is juicy and rich but finishes dry with classic apple tartness and a mineral flavor that gives a farm-fresh impression.
