Grown on the family-owned farms of Asociacion Para el Desarrollo Integral San Pedro Necta, this winter-harvest coffee bean from the Huehuetenango region of Guatemala is one of the latest to hit the line for north Seattle coffee roaster True North. The Ballard neighborhood roaster has a tech-to-craft story like many of those in the Pacific Northwest and has been promoting quality coffee in the ‘hood since 2001. Owned by self-taught roasters John and Maine Hofius, the coffee roasting house was the first roaster in the area to add roast dates on each of the bean bags so customers could be certain of their coffee’s freshness. Their website provides these customers with harvest seasons, where to buy and how to brew, guiding the drinker to the optimal cup of coffee.
The Guatemalan Huehuetenango is a “micro lot” that is fruit-forward and accented with caramel tones, with sweet acidity, spice and cherry aromas and flavors. So much that True North suggests drinking it with a bowl of Northwest Bing or Rainier cherries.
