Medford, Ore.’s Immortal Spirits & Distilling Company was the first to make single malt whiskey in Southern Oregon, done so in hand-hammered pot stills they forged themselves, producing only small batches of spirits. The Eau de Vie Poire, their pear brandy, is no different—only 313 hand-labeled bottles were produced from the 2010 Rogue Valley pear harvest. Clear, clean and smooth, the fruit is aromatic but not overwhelming on the palate, finishing with vanilla bean ice cream and obvious ripe pear.
