Welcome to the Daily Sip, our day-to-day suggestions for how to spend your waking hours in the world of libations, from juice and tea to wine, beer and more.

WINE WEDNESDAY: EFESTĒ 2011 Sauvage Sauvignon Blanc, Boushey Vineyard, Yakima Valley

From the final vintage of Brennon Leighton as head winemaker, the 2011 Sauvage Sauvignon Blanc, hailing from the prestigious Boushey Vineyard in Yakima Valley, is an insight into the new style of the winery now led by Peter Devison. Instant and electric aromas of gooseberry, grapefruit and limestone are later followed by a lemon thyme herbal note and Christmas tree pine needles. Wide and round on the palate, this wine conveys a lush fruit and opulent mouthfeel but with bright acidity and citrus — a perfect line-straddling wine as we push out of winter and into spring.
