“Innovation is required of products entering a market,” says Kyle Akin, owner of Eugene, Oregon’s Crescendo Organic Spirits. Akin, who co-founded Crescendo in 2013, began with the idea of handcrafting Italian-style traditional liqueurs, but soon started to wonder why no one was making limecello, given the prevalence of limoncello and growing popularity of arancello.
So Crescendo decided to make it happen. The resultant Limecello, crafted entirely from organic ingredients, is a surprisingly golden liqueur with just a tinge of green color to it.
