If you read my write-up of the TOAST 2015 event, you know I’m excited about the potential of Portland’s Thomas & Sons Distillery, the new project from the people behind the locally famous Townshend’s Tea. Thomas & Sons, which started with three tea exceptional liqueurs capturing smoky, sweet and spicy tea flavors, now has a new release—Townshend’s White Rose Specialty Distilled Spirit.
Distilled in a low-temperature still using rose petals and Townshend’s white tea, the resultant elixir is uniquely delicate, and far more subtle than the earlier liqueurs mentioned. Bottled at 80 proof and as clear as vodka, the elixir is based in cane sugar spirits which bring a notable but far from cloying sweetness to the end product. Light floral elements cross with hints of both white and earl gray tea blends on the nose, with hints of grapefruit brightness arriving on the palate and in the soft, smooth finish. This release does nothing to temper my excitement about the Thomas & Sons project.
