Recipe: Beer Brunch Cocktails with Deschutes Brewery

All you want to do is drink beer for breakfast. Thankfully, Deschutes Brewery has mastered of the beer brunch cocktail, making your dreams come true with a variety of recipes to soothe that sudsy morning itch. Blended with rye, maple syrup and topped with crispy bacon, the Obsidian Maple Bacon Stout provides good vibes first thing in the A.M.

“These ingredients provide just the right balance of flavors and textures,” says Chef Jeff Usinowicz, the brewery’s corporate executive chef. “Fat from the bacon, bitterness from the beer, warmth and sweet highlight from the grain of the whiskey and sugar from the maple syrup. In simplicity you have fat, sugar, spirit, bitter, water — these ingredients are the foundation for a tasty, well-balanced drink that is agreeable for most palates.”

Although beer cocktails have been trending for the last decade, Usinowicz says they are still striding today because they hold a few specific purposes: to give non-beer drinkers a way to appreciate beer and to provide a creative twist for the already avid beer fan.

“If you think about it, there isn’t much out there that is similar in taste to help warm up someone’s palate, especially if they usually are just not interested,” the chef says of the savory breakfast cocktail. “Most people are pretty stoked to have bacon in a beer and the slight sweetness really gets their palate comfortable with the classic flavors in the stout.”

With a bit of roasted bitter chocolate flavor and a thick slab of everyone’s favorite breakfast meat, Usinowicz believes few situations beat drinking this cocktail outside in the summer sun paired with an equally delicious brunch. Obsidian Maple Bacon Stout

Makes 1 cocktail

8 ounces Deschutes Brewery Obsidian Stout
1/4 ounce maple syrup
1 ounce rye whiskey
Garnish: 2 slices crispy bacon

In a 16-ounce pint glass filled with crushed ice, pour all of the ingredients in and stir gently to combine. Garnish with bacon and serve with a straw.
