It was a cider from San Juan Island’s Westcott Bay Cider that turned Dave White (also known as OldTimeyDave) on to the fermented fruit drink. Graphic designer by trade but cider lover at heart, White kicked off his blog, Old Time Cider, to “evangelize and promote cider” then launched his nano-cidery, Whitewood Cider Co., in Olympia, Wash., as the first cidery in Washington’s South Puget Sound region. A founding member and current president of the Northwest Cider Association, White is a mainstay for judging cider competitions, cider-related brain-picking and a respected palate in the area and field. Within Whitewood’s Old Fangled Dry Cider series, the latest release to hit the market in a limited fashion is the Gravenstein Single Varietal Heirloom Cider, produced from 100 percent Washington apples from the 2012 harvest. “The Grav” sports aromas of spiced citrus, sweet orange and tart green apple, and although it is seriously dry, the mouthfeel is resonant with those deep green apple flavors and earth.
