DISTINGUISHED FARM-TO-TABLE, EUROPEAN-STYLE BISTRO BETHANY’S TABLE PARTNERS WITH DAOU FAMILY ESTATES TO HOST “HOUSE OF THE SOUL OF A LION” WINE DINNER

Known as a freestyle, scratch kitchen, farm-to-table bistro, Bethany’s Table is partnering with DAOU Family Estates, a family-owned and operated winery committed to producing collectible, world-class wine, to host a “House of the Soul of a Lion” wine dinner on September 16th. In addition to five world-class wines, two Soul of a Lion wines will be served during the dinner. Soul of a Lion is DAOU’s acclaimed flagship wine produced by the prestigious Paso Robles, California-based winery. Each bottle of Soul of a Lion represents a nine-year journey which begins with rare bois rosé French oak barrels. Soul of a Lion is the crown jewel of DAOU and an emblem of the winery’s quest to produce unsurpassed Cabernet Sauvignon from the terroir of DAOU Mountain.

A DAOU wine representative and resident storyteller will be at the event to take guests on a guided exploration of some of their most exquisite wines paired with a six-course, expertly prepared dinner designed by Bethany’s Table Chef and Owner Janet O’Connor. O’Connor is a veteran in Portland’s culinary scene, having attended Western Culinary Institute in Portland and she worked at Ringside, Atwaters, Zell’s, the Heathman, and Meriwether’s prior to opening Bethany’s Table in 2008. The menu features dishes including Scallop, Avocado and Grapefruit Ceviche, Poached Lobster and Butter Lettuce Salad, and Osso Bucco with Charred Farmer’s Market Vegetables. O’Connor collaborated with DAOU to create a unique menu that pairs well with each bottle of DAOU wine that is served.

Known as “a jewel of ecological elements,” DAOU Mountain is created from a very rare soil, calcareous clay. This soil, famously found in Saint-Émilion and the right bank of Bordeaux, is composed of clay with a calcareous and limestone subsoil perfect for growing Cabernet Sauvignon and Bordeaux varieties. Previously known as Hoffman Mountain Ranch, the property produced notable wines and was widely considered the birthplace of modern winemaking in Paso Robles. Brothers Georges and Daniel Daou purchased the original Hoffman Mountain Ranch property in 2007 and completely restored the original redwood winery, preserving a vital part of Paso Robles history. DAOU Mountain rises 2,200 feet in elevation in the hills of the Adelaida District on the west side of the Paso Robles AVA. With its steep mountain slopes, DAOU Mountain sits dramatically above the Coastal Range with breathtaking views from the highest winery on the Central Coast of California. Soul of a Lion wines represent the strength and courage seen in Georges’ and Daniel’s father, Joseph Daou, who protected his children in Beirut during the advent of the Lebanese Civil War in 1975. The Bodyguard wines represent the brothers’ mother, Marie Daou, who defined their relocation to Paris, France as a loving and hopeful time, protecting her sons.

Some of the distinctive DAOU wines that will be featured at the wine dinner include a 2020 Reserve Rosé, a 2019 Bodyguard Red Blend, a 2018 and 2019 Patrimony Cabernet Sauvignon, and a 2019 and 2020 Soul of a Lion Bordeaux Blend, among others.

“The reason I chose DAOU really has to do with their family story – it’s such a part of who they are and why they do what they do. Georges and Daniel Daou’s family escaped Beirut during the Lebanese Civil War in 1975 and they moved to Paris before moving to the United States. Family is such a huge part of what they do and that really resonated with me. They show deep honor not only to their family, but to their property, their vineyards, and their wines,” said Janet O’Connor, Chef and Owner of Bethany’s Table.

Bethany’s Table recently celebrated the completion of a $500,000 remodel. After 15 years serving as the distinguished dining destination for locally sourced, seasonal, and organically grown European-style cuisine in Bethany Village, the newly-renovated Bethany’s Table features a new sit-down bar, a climate-controlled wine cellar, and a fully redesigned and expanded kitchen. Specifically, the restaurant features a new, climate-controlled wine cellar that holds 1,200 bottles. An advanced wine program features wines from Oregon and Walla Walla, Washington, and a variety of European wines, especially from France and Italy. A new, long-term, climatized wine storage cellar will also be installed, and it will hold up to 10,000 bottles.

The wine dinner is designed to spark a sense of community between all who attend. Long communal tables in the restaurant invite conversation and conviviality as guests enjoy dinner paired with wine. Diners with dietary sensitivities can likely be accommodated but those requests must be made prior to purchasing tickets. The cost for the wine dinner is $170 plus 18 percent gratuity per person, which includes the six-course dinner, paired with seven wines.
